Braised shredded snails have a unique flavor and are very popular with consumers. The processing method is as follows: 1. Raw material processing: Wash the sediment on the fresh snails, then inject water into the tanks and tanks, add salt in proportion of 8% to 10%, and mix them with brine. The cleaned snails were placed in, water was allowed to inundate the snails 10 to 15 cm, and immersed for 4 to 5 hours. 2. Hot cooking or cooking: Wash the impregnated snail into the hot water inside the hot cook or steamer steamer. The temperature should be controlled at 70 ~ 80 °C, steaming time to open the shell, snail meat is easy to strip. 3. Meat grading: hot steamed field snails, hot smashing, cut squid and other debris, and then graded (4cm above the level, 3 to 4cm for the second level, 3cm below the third level). After grading and cleaning inspection, remove dead rotten meat and impurities. 4. Ingredients impregnated: snail meat after inspection, drained with a strainer, and placed in a box. For each 100 kg of snail meat, add 3 to 6 kg of soy sauce, 1 to 2 kg of salt, 3 kg of rice wine, and 50 g of pepper. Stir and let it stand for 2 to 3 hours before draining. 5. Frying: Heat the vegetable oil in a pan to 160-180°C, fry the marinated meat in a pan for 2 to 3 minutes, and remove until amber. 6. Seasoning preparation: Add 35 g of Yuanfen, cinnamon and star anise, 25 g of dried tangerine peel, 15 g of pepper, 10 g of pepper, 2 kg of fresh ginger, 3 kg of onion, boiled in clean water for 2 to 3 hours and then filtered. Then add lard 7kg, soy sauce 3 ~ 4kg, salt 2 ~ 3kg, rice wine 1kg, monosodium glutamate 25g, pepper 15g, sesame oil 50g, and finally add water to 100kg, filter after boiling, keep warm to 70 °C reserve. 7. Bottling: 500 g glass bottles, each containing 280 g meat and 220 g soup. The white head of snail meat should be layered toward the bottle wall and then poured into the soup. 8. Exhaust seal: Exhaust temperature should be controlled at 80 °C, time 30 minutes, immediately after the exhaust heat seal. 9. Sterilization and cooling: Sterilize for 30 minutes at 121°C, cool to 30°C, remove and store the product, heat for 5 to 7 days, and package it for sale after inspection.
