Fresh mushrooms stored in film bags, due to respiration, consume oxygen, release carbon dioxide and water, and other volatiles, which changes the original gas composition in the package; this change is exchanged with the outside through the membrane's gas permeability. After a period of adjustment, there will be a steady state inside the package, oxygen and carbon dioxide reach equilibrium concentrations, and the product's respiration rate will be equal to the rate of film infiltration, thus prolonging the preservation time. The air permeability of the film has an important influence on the preservation effect. The air permeability of the commercially available packaging film is not good. The most used one is the silicon window container bag, which is made of a 0.15 to 0.18 mm thick polyethylene film. Bags, the difference is in the bag wall with a piece of silicone rubber membrane for gas exchange window, silicon window size has a certain size. This preservation technology is not yet widely used at present.

This preservation period of up to 10 days is too long, affecting the smell of mushrooms.
Pleurotus ostreatus can also be used for anion preservation, chemical preservation, dilute hydrochloric acid preservation, natural freezing preservation, etc., which can extend the shelf life of mushrooms. Treating fresh mushrooms with certain antioxidants and hormones to lower the pH to inhibit the enzyme activity can also extend the preservation time. Due to the development of preservation technology, new technologies such as air-conditioning storage and radiation storage have also emerged.
