The production of concentrated cucumber juice can avoid losses, facilitate storage and transportation, add value to products, and facilitate export. The processing technology is as follows: 1. Pretreatment: The cucumber should be washed in running water, drained, and cut into crusher pieces of 1-2 mm at both ends. Clarification: The juice after fine filtration is placed in a closed container, and agar or gelatin, which weighs 0.1% of the juice, is added and allowed to stand for about 4 hours to further remove impurities, colloidal substances, and other macromolecular polymers. The upper juice after Cheng Tian is finely filtered through a 200 mesh screen. IV. Formulation: CMC-Na was added 0.1% of the liquid weight after the juice was filtered. Then according to taste requirements, or add an appropriate amount of white sugar and citric acid, adjust the sweet and sour taste; or add appropriate amount of salt to adjust the salty taste; or without seasoning, made of original flavor. 5. Concentrate, homogenize the juice and add it to the vacuum cooker. Control the vacuum at 0.8-1.0Mpa for concentration. Afterwards, the homogenizer was re-introduced, homogenized under a pressure of 6-8 MPa to refine the nutrient particles in the juice, and further divided the vegetables to make the system more stable. 6. Sterilization and packaging Concentrated juices are sterilized by heat exchangers at 90-95°C. 30 seconds. Then, in a sterile environment, the heat is loaded into a sterilized package and stored at a temperature of 0-10°C.
